We are very happy to be joining Lia’s Kitchen, Penylan Pantry and Mezza Luna chefs on a new culinary adventure, hosted at the lovely Little Man Coffee this October. Join us for a WasteLess dinner that will inspire you to create your own WasteLess meals at home and in your communities.
Our menu will be inspired by food donations that would have otherwise been wasted and produce/products grown or made using a close to ‘zero-waste’ ethic.
Our exciting menu will be finalised just 24 hours before the event but our imagination is already running wild inspired by food that we have previously collected for events and producers who are keen to work with us. Here’s a little teaser of what could be coming your way:
Preserved or fermented vegetable dishes from around the globe such a kimchi and pickled carrots
Greek bread, garlic and walnut dip with vegetable tempura
Middle Eastern Fatoush salad with greens and bread croutons
Syrian Tass’ieh chickpeas
Welsh seasonal vegetable and meat stew
Fusion baked yoghurt dessert with preserved fruit

This is a charity dinner dedicated to Dr Tom Wollam, a waste reduction champion and researcher who passed away in 2007. Tom’s work contributed to the development of ambitious waste reduction targets in Wales and today Wales is boasting an impressive 64% recycling rate, one of the highest in the world. Tom was not deterred from hands on waste research by his condition cystic fibrosis, a genetic conditions that affects nearly 11,000 adults in Britain. We are inspired by waste heroes like Tom who was a true champion in how he led his life making the most of every minute (and every bite) and loving the environment and our globe with all his heart.
